  • 1 (3-pound) beef tenderloin roast
  • 2 teaspoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • 3/4 teaspoon dried rosemary, crushed

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Tie the tenderloin at 2-inch intervals with kitchen string.

Step 3 -Combine the oil and the garlic in a bowl.

Step 4 -Brush the garlic-oil mixture over the meat.

Step 5 -Combine the salt, the pepper, the basil, and the rosemary in a bowl.

Step 6 -Sprinkle the seasoning mixture evenly over the meat.

Step 7 -Place the roast on a rack in a shallow roasting pan.

Step 8 -Roast, uncovered, until the meat reaches your desired doneness, 135 degrees F internally for medium-rare, 140 degrees F for medium, and 145 degrees F for medium-well, about 40-50 minutes.

Step 9 -Let the roast stand for 10 minutes.

Step 10 -Remove the string, slice, and serve.
