Crunchy Garlic Brussels are basically the apex way of serving up the newly popular veggie! The leafy, tender-on-the-inside, crisp-on-the-outside greens are just perfect when roasted with some succulent pancetta and fragrant garlic, bringing out the best in all three flavors! A little light seasoning and bam! Instant vegetable heaven! Crunchy Garlic Brussels are something to behold!
Ingredients
- 1 pound Brussels sprouts, trimmed and halved (quartered if large)
- 2 ounces pancetta, minced
- 1 clove garlic, minced
- 1 1/2 teaspoons extra-virgin olive oil
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/4 cup water
Directions
Step 1 -Position a rack in the upper third of the oven.
Step 2 -Preheat the oven to 450 degrees F.
Step 3 -On a large, rimmed baking sheet, add the Brussels sprouts, the pancetta, the garlic, and the extra-virgin olive oil and toss to evenly coat.
Step 4 -Season the sprouts mixture with the kosher salt and the freshly ground black pepper.
Step 5 -Spread the sprouts mixture out into a single, even layer.
Step 6 -Roast the sprouts mixture, stirring them once halfway through, until the sprouts are brown on the edges and tender, about 20 minutes.
Step 7 -Add the water to the baking sheet and scrape up the brown bits from the bottom of the pan.
Step 8 -Transfer the sprouts mixture to a serving bowl.
Step 9 -Serve.
