It might take a little time to perfect the Crown Jewel Pie, but it really is royally delicious!

Ingredients

  • 1 (.3-ounce) package sugar-free orange gelatin dessert mix
  • 4 cups water, boiling, divided, plus 2 cups water, cold, divided
  • 1 (.3-ounce) package sugar-free lime gelatin dessert mix
  • 1 (.3-ounce) package sugar-free strawberry-banana gelatin dessert mix
  • 1 (.3-ounce) package sugar-free strawberry gelatin dessert mix
  • 10 graham cracker squares
  • 4 ounces whipped topping, thawed

Directions

Step 1 -In a medium bowl, add the orange gelatin mix and 1 cup of the boiling water and stir until completely dissolved, about 2 minutes.

Step 2 -Add 1/2 cup of the cold water.

Step 3 -Transfer the orange mixture to a square or rectangle medium-sized container.

Step 4 -Refrigerate the orange mixture.

Step 5 -Repeat the dissolving and refrigerating process with the lime gelatin mix and the strawberry-banana gelatin mix, using 1 cup of the boiling water and 1/2 cup of the cold water for each, transferring each gelatin mixture to its own container for refrigeration.

Step 6 -Refrigerate all of the gelatin mixes until very firm, at least 4 hours and up to overnight.

Step 7 -Cut the gelatin mixtures into 1/2-inch cubes.

Step 8 -Return the cubes to the refrigerator.

Step 9 -In a large bowl, add the strawberry gelatin mix and the remaining boiling water and stir until completely dissolved, about 2 minutes.

Step 10 -Add the remaining cold water and stir to combine.

Step 11 -Refrigerate the bowl until slightly thickened but still mixable, about 45 minutes.

Step 12 -In the bottom of a 9-inch pie pan or rectangle pan, add the crackers and arrange them into a single layer.

Step 13 -Coat the sides of the pan with nonstick spray. Set it aside.

Step 14 -Transfer the slightly thickened strawberry gelatin mixture from the refrigerator and add the whipped topping, stirring vigorously until completely blended.

Step 15 -Add the orange cubes, the lime cubes, and the strawberry-banana cubes to the strawberry gelatin mixture and very gently stir it to combine.

Step 16 -Pour the gelatin mixture into the pan.

Step 17 -Refrigerate the pie until firm, at least 3 hours.

Step 18 -Slice and serve.
