Ingredients

  • 4 chicken thighs, bone-in and skin-on
  • salt, to taste
  • pepper, to taste
  • 2 tablespoons olive oil
  • 5 cloves garlic
  • 1 tablespoon butter
  • 1/2 lemon, juiced
  • 1 1/2 tablespoons honey
  • fresh parsley, optional, to taste, chopped, for garnish

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Pat the chicken thighs dry.

Step 3 -Season both sides of the chicken thighs with the salt and the pepper.

Step 4 -Drizzle the olive oil over the skin-sides of the chicken.

Step 5 -Set a cast-iron skillet over medium heat on the stovetop.

Step 6 -Cook the chicken thighs, skin-side down, until they are very browned and crispy, about 5-7 minutes.

Step 7 -Transfer the skillet from the heat.

Step 8 -Scatter the garlic cloves around to the chicken thighs.

Step 9 -Place the skillet in the oven until the chicken is cooked through at 165 degrees F, about 15 minutes.

Step 10 -When the chicken is cooked through, set it on a separate plate, leaving the garlic and juices in the skillet.

Step 11 -Add the butter, the lemon, and the honey to the skillet.

Step 12 -Over low heat on the stovetop, stir the butter mixture, scraping off the browned bits from the bottom of the skillet.

Step 13 -When the butter mixture is combined, put the chicken thighs back in the skillet and spoon the sauce over top.

Step 14 -Garnish with the parsley.

Step 15 -Plate and serve.
