Ingredients
- For the sauce:
- 1 1/2 tablespoons light soy sauce
- 1 1/2 teaspoons dark soy sauce
- 1 1/2 tablespoons oyster sauce
- 1 1/2 tablespoons Chinese cooking wine
- 1 1/2 teaspoons white sugar
- white pepper, to taste
- 1 1/2 teaspoons corn flour or cornstarch
- 3 tablespoons water
- For the chow mein:
- 1 (6-ounce) package chow mein noodles
- 1 1/2 tablespoons canola oil
- 2 cloves garlic, finely minced
- 7 ounces ground beef
- 3 green onion stems, cut into 2-inch lengths, white and green parts separated
- 1 egg
- 1 carrot, peeled, cut into thin matchsticks
- 2 cups green or red cabbage, finely sliced
- 1 heaping cup bean sprouts
Directions
Step 1 -In a bowl, add the light soy sauce, the dark soy sauce, the oyster sauce, the Chinese cooking wine, the white sugar, and the white pepper and whisk to combine.
Step 2 -In a separate bowl, add the corn flour and the water and whisk to combine. Set the slurry mixture aside.
Step 3 -Prepare the chow mein noodles according to the package directions, making sure to drain them well after they finish cooking.
Step 4 -In a large, nonstick pan over high heat, add the canola oil.
Step 5 -Add the garlic to the hot oil and cook until fragrant, about 10 seconds.
Step 6 -Add the beef to the garlic and cook, while crumbling the meat, until the beef is no longer pink, about 3-5 minutes.
Step 7 -Add 1 1/2 tablespoons of the sauce mixture and the white parts of the green onions to the beef mixture and cook, while stirring, until the beef is coated and beginning to caramelize, about 2 minutes.
Step 8 -Add the slurry mixture to the remaining sauce mixture and stir to combine.
Step 9 -Add the egg to the beef mixture and stir until it is scrambled and incorporated.
Step 10 -Add the carrots and the cabbage to the beef mixture and cook, while stirring, until the cabbage starts to wilt, about 1 minute.
Step 11 -Stir the remaining sauce mixture to ensure it is well-combined.
Step 12 -Add the bean sprouts, the cooked noodles, and the remaining sauce mixture to the beef mixture and toss well until the sauce coats the noodle mixture evenly, about 1 minute.
Step 13 -Add the green parts of the green onions to the noodle mixture and toss to combine, about 1 minute.
Step 14 -Serve.
