Ingredients

  • 3 tablespoons oil
  • 3 chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 onion, sliced
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 tablespoon garlic powder
  • 5 cups milk
  • 4 cups penne pasta, uncooked
  • 1 cup pepper jack cheese, shredded

Directions

Step 1 -Heat the oil in a large pot over high heat.

Step 2 -Add in the chicken and cook until there is no pink visible, about 5-6 minutes.

Step 3 -Transfer the chicken from the pot.

Step 4 -Add in the bell peppers and onion, cooking until the onion is translucent and soft, about 6 minutes.

Step 5 -Add the chicken breasts back into the pot.

Step 6 -Season with the salt, pepper, chili powder, cumin, and garlic powder. Stir the mixture until everything is evenly coated, about 30 seconds.

Step 7 -Add in the milk and penne, stirring it constantly to prevent any pasta from sticking to the bottom.

Step 8 -Cook until the pasta is completely cooked, the milk has been reduced to a thick sauce that coats the pasta, and the chicken is cooked through at 165 degrees F, about 20 minutes.

Step 9 -Add in the cheese and mix until it is melted.

Step 10 -Remove the pot from the heat.

Step 11 -Serve.
