Ingredients

  • 4 ounces halloumi cheese
  • 3 tablespoons unsalted butter
  • 3 heaping cups fresh sweet corn, from 3-4 cobs
  • kosher salt, to taste
  • black pepper, to taste
  • 2 tablespoons chives, thinly sliced
  • 1 tablespoon cilantro, minced
  • 1 lime, optional, zested, for topping

Directions

Step 1 -Preheat a large skillet over medium-high heat.

Step 2 -Add the halloumi to the hot skillet and sear it on each side until browned, about 2-3 minutes.

Step 3 -Transfer the halloumi to a clean plate and cut it into bite-sized pieces.

Step 4 -Reduce stovetop heat to medium.

Step 5 -Add the butter to the hot skillet and cook, while swirling gently, until it is melted and lightly browned, about 4-5 minutes.

Step 6 -Add the corn to the melted butter and cook, while stirring, until it is tender and cooked through, about 1-2 minutes.

Step 7 -Season the corn with the salt and the black pepper.

Step 8 -Transfer the skillet from the heat.

Step 9 -Add the chives and the cilantro to the corn and stir to combine.

Step 10 -Layer the halloumi pieces over top of the corn mixture.

Step 11 -Serve topped with the lime zest.
