Ingredients

  • 1 cup unsalted butter, room temperature
  • 3/4 cup light brown sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup white granulated sugar, optional, for rolling

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line a baking sheet with parchment paper or a nonstick baking mat.

Step 3 -In the bowl of a stand mixer with the paddle attachment, add the butter and the brown sugar and cream until combined.

Step 4 -Scrape down the sides of the bowl and mix the butter and the brown sugar again.

Step 5 -Add the egg and the vanilla and mix until well-combined.

Step 6 -In a separate bowl, add the flour, the salt, and the baking powder and whisk to combine.

Step 7 -Add the flour mixture to the butter mixture and stir until just combined.

Step 8 -Using a cookie scoop, scoop out 1 1/2-tablespoon-sized portions of the dough and roll them into balls.

Step 9 -Roll the dough balls in the granulated sugar.

Step 10 -Place the dough balls on the prepared cookie sheet and press them down with the tines of a fork.

Step 11 -Refrigerate the dough balls for at least 30 minutes and up to 1 hour.

Step 12 -Bake until the centers of the cookies are set, about 10-12 minutes.

Step 13 -Allow the cookies to cool on the baking sheet for 3-4 minutes.

Step 14 -Transfer the cookies to a wire rack to cool completely.
