Hot honey is our friend Bob's favorite blend of flavors. He was determined to perfect it, and that's how Bob's Hot Honey Wings came to be. He takes the juicy chicken wings and rubs them with some electrically spicy seasonings. He creates his alluring sweet honey glaze with a kick that has the power to make you come back for more! Served with spicy grilled shishito peppers, fiery Thai chiles, cooling cilantro, crunchy peanuts, and chili crisps for even more heat, Bob's Hot Honey Wings are the way to go when the sweet and spicy cravings need to be extinguished! Ingredients

  • For the wings:
  • 1 tablespoon chile powder or cayenne pepper
  • 1 3/4 teaspoons kosher salt
  • 1 tablespoon ground black pepper
  • 1 pound chicken wings, patted dry
  • 1 cup shishito peppers
  • For the glaze:
  • 1 lime, juiced
  • 1/2 cup honey
  • 1 tablespoon fish sauce
  • 3 tablespoons chili crisp
  • For serving:
  • 3-5 red Thai chiles or jalapeños, thinly sliced
  • 1/4 cup cilantro leaves
  • 1/4 cup salted dry-roasted peanuts, coarsely chopped
  • 1 lime, cut into wedges

Directions

Step 1 -Line a rimmed baking sheet with a single layer of foil.

Step 2 -In a small bowl, mix the chili powder, the salt, and the black pepper until well-combined.

Step 3 -Arrange the chicken wings in a single layer on the prepared baking sheet.

Step 4 -Rub the spice mixture all over the chicken wings.

Step 5 -Let the coated chicken wings sit at room temperature for 15 minutes or cover and chill for up to 1 day. If chilling, let the chicken sit at room temperature for 1 hour before cooking.

Step 6 -Place a rack in the middle of the oven and preheat the oven to 375 degrees F.

Step 7 -Bake the wings until slightly golden, and an instant thermometer inserted in the center reads 165 degrees, about 30-40 minutes.

Step 8 -Carefully transfer the wings out of the oven and let them cool slightly.

Step 9 -Preheat the grill to medium heat (325-350 degrees F).

Step 10 -In a large bowl, add the lime juice, the honey, the fish sauce, and the chili crisp.

Step 11 -Transfer the cooled chicken wings to the bowl and toss to coat in the honey glaze.

Step 12 -Place the glazed chicken wings and the shishito peppers on the grill, turning occasionally, until the chicken wings are deep golden-brown and charred in spots and the peppers are blistered and charred in spots, about 5-8 minutes.

Step 13 -Carefully transfer the grilled chicken wings and the grilled shishito peppers to a serving platter.

Step 14 -Top the chicken and the peppers with the chiles, the cilantro, and the peanuts.

Step 15 -Plate the wings and the peppers with the lime wedges.

Step 16 -Serve.
