Invite your BFF over and make them these Best Friend Potatoes! They'll fall head-over-heels for the layers upon layers of cheesy, creamy, yummy, scalloped potatoes. Sprinkled with delicious, salty ham for a burst of extra flavor, you can count on your dear pal to stick around forever and ever. Some friends bond of shopping or sports, but for you and your bestie, it's these Best Friend Potatoes!
Ingredients
- 2 tablespoons butter, softened, plus more, to taste, for greasing the baking dish
- 1 yellow onion, chopped
- 3 cups ham, cooked and diced
- 1 1/2 cups half-and-half
- 1 1/2 cups heavy cream
- 1/4 cup flour
- black pepper, to taste
- 1 cup cheddar cheese, grated
- 1 cup Monterey Jack cheese, grated
- 3 pounds russet or Yukon Gold potatoes, thoroughly washed and sliced 1/8-inch-thick
- parsley, to taste, chopped, for garnish
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Use the extra butter to grease a 9x13-inch baking dish.
Step 3 -In a large skillet over medium heat, add the remaining 2 tablespoons of the butter and cook until it has melted.
Step 4 -Add the onions to the melted butter and cook until they begin to become translucent, about 1-2 minutes.
Step 5 -Add the ham pieces to the onion mixture and cook until they are thoroughly heated, about 3-4 minutes.
Step 6 -Transfer the skillet from the heat.
Step 7 -In a microwave-safe bowl, add the half-and-half and the heavy cream and stir to combine.
Step 8 -Place the bowl in the microwave and heat until the cream mixture is no longer cold, about 1 minute.
Step 9 -Whisk the flour and the pepper into the cream mixture until it is completely combined.
Step 10 -In a large bowl, add the cheddar cheese and the Monterey Jack cheese and mix to combine.
Step 11 -Evenly layer 1/3 of the potato slices in the bottom of the prepared baking dish, then evenly top with 1/3 of the ham mixture, 1/3 of the cheese mixture, and 1/3 of the cream mixture. Repeat this process twice.
Step 12 -Cover the baking dish with foil and bake, about 40 minutes.
Step 13 -Discard the foil, then bake again until the potato mixture is bubbly and hot, about 20 minutes.
Step 14 -Serve the potatoes garnished with the parsley.
