Ingredients
- For the dip:
- 1 tablespoon olive oil, plus more, to taste, for greasing the dish
- 1 pound ground beef
- 1 1/2 cups enchilada sauce
- 1 cup canned roasted corn kernels, drained
- 1 (4.5-ounce) can chopped green chiles
- 1 cup Monterey Jack cheese, divided
- 1 cup cheddar cheese, shredded, divided
- kosher salt, to taste
- freshly ground black pepper, to taste
- Optional, for serving:
- cilantro, to taste, torn or chopped
- green onions, to taste, chopped
- tortilla chips, to taste
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Using the extra oil, lightly coat a 9x13-inch baking dish.
Step 3 -In a saucepan over medium-high heat, add 1 tablespoon of the remaining olive oil.
Step 4 -Add the ground beef to the hot oil and cook, while crumbling, until it is no longer pink, about 5-7 minutes.
Step 5 -Drain the excess fat from the saucepan.
Step 6 -Add the enchilada sauce, the corn, the chiles and their juices, 1/2 cup of the Monterey Jack cheese, and 1/2 cup of the cheddar cheese to the beef and stir to combine.
Step 7 -Season the beef mixture with the salt and the black pepper.
Step 8 -Add the beef mixture to the prepared baking dish and spread it out evenly.
Step 9 -Top the beef mixture with the remaining Monterey Jack cheese and the remaining cheddar cheese.
Step 10 -Bake until the beef mixture is bubbly around the edges, about 5 minutes.
Step 11 -Allow the dip to cool for 5 minutes.
Step 12 -Top with the cilantro and the green onions.
Step 13 -Serve with the tortilla chips.
