Ingredients

  • For the oyster sauce:
  • 2 tablespoons oyster sauce
  • 1 tablespoon chili garlic sauce
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • For the beef:
  • 1 pound flank steak, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon cornstarch
  • 1 egg yolk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the stir fry:
  • 2 tablespoons peanut oil, divided
  • 1 onion, sliced
  • 3.5 ounces shiitake mushrooms, sliced
  • 1 red bell pepper, sliced into thin strips
  • 4 cups broccoli florets, cut into small bite-size pieces
  • 1/3 cup water
  • 20 ounces udon noodles, cooked

Directions

Step 1 -In a small mixing bowl, combine all of the oyster sauce ingredients and set aside.

Step 2 -Add the flank steak to a large bowl.

Step 3 -Add the garlic, cornstarch, egg yolk, salt, and pepper. Toss to combine.

Step 4 -Heat 1 tablespoon of peanut oil over the stovetop in a large skillet.

Step 5 -Add half of the flank steak and brown for about 3 minutes.

Step 6 -Work in batches to prevent the steak from sticking together.

Step 7 -Once all the beef is cooked, transfer it to a plate for later.

Step 8 -Add the remaining tablespoon of peanut oil to the same skillet that you cooked the steak in. Cook the onions and shitake mushrooms for about 5 minutes until the onions are translucent.

Step 9 -Add the pepper, broccoli, and 1/3 cup of water and cook until the broccoli is bright green and tender, another 7 minutes or so.

Step 10 -Add the cooked udon noodles, beef, and oyster sauce.

Step 11 -Toss everything well so that all ingredients are evenly coated in the sauce.

Step 12 -Allow the sauce to thicken for another minute or two.

Step 13 -Serve and enjoy!
