Ingredients

  • 1 tablespoon olive oil, plus more for drizzling
  • 6 chicken breasts, halved lengthwise
  • salt, to taste
  • ground black pepper, to taste
  • 3/4 cup all-purpose flour
  • 1 tablespoon paprika
  • 2 eggs, beaten
  • 2 cups seasoned breadcrumbs
  • 1 large lemon, zested

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -Line a large baking sheet with aluminum foil and drizzle 1 tablespoon of the olive oil over it.

Step 3 -Place the baking sheet in the preheated oven.

Step 4 -Flatten the chicken breasts so they are all about 1/4-inch thick.

Step 5 -Season the chicken with salt and pepper.

Step 6 -Mix the flour and paprika together on a large plate.

Step 7 -Beat the eggs with salt and pepper in a shallow bowl.

Step 8 -Mix the bread crumbs and lemon zest together on a separate large plate.

Step 9 -Dredge each chicken piece in the flour mixture, then the egg, then the breadcrumbs mixture, and set each aside in a single layer on a clean plate. Continue the process until all of the chicken breasts are coated.

Step 10 -Remove the baking sheet from the oven, and arrange the chicken in 1 layer on the sheet.

Step 11 -Drizzle the olive oil over each piece of the coated chicken.

Step 12 -Bake in the preheated oven for 5-6 minutes.

Step 13 -Flip the chicken and continue baking until it is no longer pink in the center and the breading is lightly browned, 5-6 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F.
