  • 1 cup apricot yogurt, can substitute peach yogurt
  • 1 (3-ounce) package apricot gelatin dessert mix
  • 1 (8-ounce) carton frozen low-fat whipped topping, thawed
  • 1 (10-ounce) package mini-marshmallows
  • 3 cups fresh apricots, peeled and cubed

Directions

Step 1 -In a large bowl, add the yogurt and the gelatin and stir to combine until the gelatin is completely dissolved, about 2 minutes.

Step 2 -Add the whipped topping to the yogurt mixture and fold gently to combine.

Step 3 -Add the marshmallows and the apricots to the yogurt mixture and fold to combine.

Step 4 -Cover the bowl and refrigerate the yogurt mixture until firm, at least 4 hours.

Step 5 -Serve.
