Ingredients

  • 1/2 cup water, warm
  • salt, to taste
  • black pepper, to taste
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 2 cups buttermilk
  • 2 large eggs
  • 4 pounds chicken thighs, bone-in and skin-on
  • 4 cups self-rising flour
  • 8 cups canola oil
  • 1/2 cup unsalted butter
  • 1/4 cup hot sauce, such as Cholula® Hot Sauce
  • 1/2 teaspoon cayenne pepper

Directions

Step 1 -In a large bowl, add the water, the salt, the pepper, the onion powder, and the garlic powder and whisk to combine.

Step 2 -Whisk the buttermilk and the eggs into the spice mixture.

Step 3 -In a gallon-sized resealable plastic bag, add the chicken thighs and the buttermilk mixture.

Step 4 -Seal the plastic bag and marinate the chicken in the refrigerator, turning the bag occasionally, for at least 8 hours and up to 24 hours.

Step 5 -Drain and discard the marinade from the plastic bag.

Step 6 -Add the flour to a large bowl.

Step 7 -Working 1 at a time, dredge the marinated chicken thighs in the flour until they are evenly coated, then place them on a clean plate.

Step 8 -Add the coated chicken thighs to the bowl filled with the flour and gently toss to coat again. Let the coated chicken thighs rest in the bowl, about 15 minutes.

Step 9 -Preheat the oven to 325 degrees F.

Step 10 -Place a wire rack on a rimmed baking sheet.

Step 11 -In a large stockpot over medium-high heat, add the oil and heat until it reaches 350 degrees F on a deep-fry thermometer.

Step 12 -Gently toss the coated chicken thighs in the flour again until they are evenly coated.

Step 13 -Working in batches, shake off the coated chicken thighs and carefully place them skin-side down in the hot oil. Fry, flipping once, until they are golden-brown, about 4-5 minutes. Note: The meat will not be cooked through at this point.

Step 14 -Transfer the fried chicken thighs to the prepared baking sheet.

Step 15 -Transfer the baking sheet to the oven and bake the fried chicken thighs until they reach an internal temperature of 165 degrees F, about 10-15 minutes

Step 16 -In a bowl, add the butter, the hot sauce, and the cayenne pepper and whisk to combine.

Step 17 -Evenly brush the hot sauce mixture over the baked chicken thighs.

Step 18 -Serve.
