We asked the Thomas family if their signature dish, the Thomas Family Bake, really counted as a "bake" if they don't even use the oven. They insisted their creamy rice and savory turkey casserole, made entirely in the microwave for incredible speed, is definitely a bake. Then they claimed they had an appointment and dashed off. Huh... anyway, Thomas Family Bake is rich and hearty and very easy to make, especially if you have any leftover turkey in your fridge, and so whether it's a bake or not, it's a very tasty dinner!

Ingredients

  • 1 medium onion, chopped
  • 1 rib celery, chopped
  • 2 tablespoons butter
  • 2 cups whole milk
  • 1 1/4 cups instant rice
  • 2 cups turkey, cooked and diced
  • 1 (10.75-ounce) can condensed cream of mushroom soup
  • 1 cup seasoned stuffing cubes
  • 1 (4-ounce) can chopped green chiles, drained
  • 1 cup cheddar cheese, shredded, divided

Directions

Step 1 -In a 2-quart microwave-safe dish, add the onions, the celery, and the butter and stir to combine.

Step 2 -Cover the dish and microwave until the butter is melted, about 1 minute 30 seconds-3 minutes.

Step 3 -Add the milk to the onion mixture and stir to combine.

Step 4 -Cover the dish and microwave on high until the milk is steaming but not boiling, about 3-5 minutes.

Step 5 -Add the rice to the milk mixture and stir to combine.

Step 6 -Cover the rice mixture and allow it to sit for 2 minutes.

Step 7 -Add the turkey, the mushroom soup, the stuffing cubes, the chiles, and 1/2 cup of the cheese to the rice mixture and stir to combine into a turkey mixture.

Step 8 -Cover the turkey mixture and microwave it on high, stirring it once halfway through, until it is heated through and the rice is tender, about 3-6 minutes.

Step 9 -Sprinkle the turkey mixture with the remaining cheese and allow it to stand until the cheese on top is melted, about 5 minutes.

Step 10 -Serve.
