This is a snack Chicago can be proud to call its own! These Windy City Minis are homemade miniature sausage rolls, with a succulent cocktail sausage at the center wrapped in a buttery golden-brown crust and coated with a nutty poppy seed layer. A fantastic onion-mustard dipping sauce and a tomato and pickle relish help make each little bite such a flavor explosion! The Windy City Minis are the snack that feels as big as the City of Big Shoulders.

Ingredients

  • 1 (14-ounce) package cocktail sausages
  • 1 (16-ounce) can jumbo refrigerated biscuits
  • 1 egg
  • 1 tablespoon water
  • 2 tablespoons poppy seeds
  • 1/2 cup yellow mustard
  • 2 tablespoons mayonnaise
  • 3 tablespoons Lipton® Golden Onion dry soup mix
  • 1/3 cup pickles, finely diced
  • 1/3 cup tomatoes, finely diced
  • 2 teaspoons celery salt

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Line a baking sheet with foil.

Step 3 -In a bowl, add the cocktail sausages.

Step 4 -Remove the biscuits from the can, separate them, and cut each of the biscuits into 4 triangles.

Step 5 -Place one of the cocktail sausages on each of the dough triangles with the tip of the sausage at the point of the triangle.

Step 6 -Press the sausage down into the biscuit, then bring the edges up on the sides of the cocktail sausage and loosely seal the edges together. The biscuit should open slightly when baking.

Step 7 -Place the sausage-biscuits on the prepared baking sheet.

Step 8 -In a bowl, add the egg and the water and whisk to combine.

Step 9 -Brush the sausage-biscuits with the egg wash.

Step 10 -Sprinkle the sausage-biscuits with the poppy seeds.

Step 11 -Bake the sausage-biscuits until the biscuits are golden-brown, about 12-14 minutes.

Step 12 -In a small bowl, add the mustard, the mayonnaise, and the soup mix and stir until well-combined.

Step 13 -In another small bowl, add the pickles, the tomatoes, and the celery salt and toss to evenly combine.

Step 14 -Transfer the sausage-biscuits to a serving platter.

Step 15 -Serve with the tomato relish and the dipping sauce.
