This is basically all the good things in life gathered up in a slow cooker. Yay! The Cracked Pot Casserole is filled with a creamy, deeply savory and delicious sauce with plenty of cream cheese richness and tang. Swimming in it is tender macaroni, succulent chicken, and crisp bacon bits! There's also so much cheese it's kind of hard to imagine! This Cracked Pot Casserole is the crack solution to what to make for dinner... and how to put a smile on everyone's face!
Ingredients
- 1 (10.5-ounce) can cream of chicken soup
- 1 cup sour cream
- 1/2 cup chicken broth
- 1 (1-ounce) packet ranch seasoning mix
- 1/2 teaspoon pepper
- 3 chicken breasts, boneless and skinless, diced into 1-inch pieces
- 3 cups cheddar cheese, shredded, divided
- 12 slices bacon, cooked and diced, divided
- 1 1/2 cups elbow macaroni
- 1 (8-ounce) package cream cheese, room temperature
- 2 green onions, optional, thinly sliced, for topping
Directions
Step 1 -In a large bowl, add the cream of chicken soup, the sour cream, the chicken broth, the ranch seasoning, and the pepper and using an electric hand mixer, beat until well-blended.
Step 2 -Add the chicken, 1/2 of the cheddar cheese, and 1/2 of the bacon and using your clean hands or a spatula, gently stir until thoroughly combined.
Step 3 -Add the chicken mixture to a slow cooker.
Step 4 -Cover the slow cooker and cook until the chicken reaches an internal temperature of 165 degrees F, about 5-6 hours on low.
Step 5 -In a large pot of salted, boiling water, add the pasta and cook until al dente, according to the package directions.
Step 6 -Add the cream cheese to the chicken mixture in the slow cooker and stir until the cream cheese is melted.
Step 7 -Drain the pasta and add it to the chicken mixture in the slow cooker, gently stirring to combine.
Step 8 -Sprinkle the remaining cheddar, the remaining bacon, and the green onions over the top of the chicken mixture.
Step 9 -Cover the slow cooker and let the heat of the chicken mixture melt the cheddar on top.
Step 10 -Serve warm.
