Ingredients

  • 1 tablespoon olive oil
  • 8 chicken thighs, bone-in and skin-on
  • salt, to taste
  • pepper, to taste
  • 3/4 cup ketchup
  • 1/3 cup soy sauce
  • 1/3 cup honey
  • 3 tablespoons garlic, minced
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1/4 teaspoon dried mustard
  • 2 tablespoons fresh parsley, optional, chopped

Directions

Step 1 -In a cast-iron skillet or heavy-bottom pan over medium heat, add the olive oil.

Step 2 -Season the chicken thighs evenly with the salt and the pepper.

Step 3 -Add the chicken thighs to the hot oil, skin-side down, and sear until golden, about 3 minutes.

Step 4 -Transfer the chicken thighs, skin-side up, to a slow cooker.

Step 5 -In a medium-sized bowl, add the ketchup, the soy sauce, the honey, the garlic, the onion powder, the dried thyme, the dried parsley, and the dried mustard and whisk to combine.

Step 6 -Pour the ketchup mixture over the chicken thighs in the slow cooker.

Step 7 -Cover the slow cooker and cook until the chicken thighs reach an internal temperature of 165 degrees F and the sauce has thickened, about 3 hours on high or 5 hours on low.

Step 8 -Transfer the chicken thighs to a serving dish.

Step 9 -Spoon the sauce over the chicken thighs.

Step 10 -Serve sprinkled with the parsley.
