Ingredients

  • 8 mini sweet peppers, sliced in half lengthwise, seeded and deveined
  • 4 ounces goat cheese, softened
  • 4 ounces 1/3-less fat cream cheese, softened
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • salt, to taste
  • black pepper, to taste
  • 4 slices bacon, cooked and crumbled, divided
  • 1/2 cup jarred sweet chili pepper sauce, for serving

Directions

Step 1 -Move the oven rack to the middle position and preheat the broiler to high heat.

Step 2 -Line an 18x26-inch baking sheet with aluminum foil.

Step 3 -In a single layer, cut-side up, add the sweet pepper halves to the prepared baking sheet.

Step 4 -In a large bowl, add the goat cheese, the cream cheese, the garlic powder, the onion powder, the salt, and the black pepper and stir to combine.

Step 5 -Add 3/4 of the crumbled bacon to the goat cheese mixture and stir to combine.

Step 6 -With a small spoon, add the goat cheese mixture to the sweet pepper halves and evenly smooth the filling with the back of the spoon.

Step 7 -Transfer the filled peppers to the oven and broil, about 3-4 minutes, watching very carefully to avoid burning. Note: If the goat cheese mixture does not begin to brown within 1-2 minutes, move the oven rack up closer to the broiler, still being careful not to overcook.

Step 8 -Transfer the poppers from the oven to a wire rack, place on a serving platter, and evenly sprinkle with the remaining crumbled bacon.

Step 9 -Serve the poppers with the sweet chili sauce.
