Ingredients
- For the crumb mixture:
- 1/4 cup all-purpose flour or gluten-free flour blend
- 1 cup brown sugar
- 1/2 cup flaked coconut
- 1 cup pecans or walnuts, toasted and chopped
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, very cold
- For the cake:
- 2 cups white flour or gluten-free flour blend
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 1 cup white sugar
- 2 eggs, room temperature
- 1 cup sour cream
Directions
Step 1 -Preheat the oven to 350 degrees F.
Step 2 -Grease a 9x9-inch baking dish or line it with parchment paper.
Step 3 -In a bowl, add 1/4 cup of the flour, the brown sugar, the flaked coconut, the pecans, and 1/2 teaspoon of the salt and stir to combine.
Step 4 -Using a cheese grater, grate 1/2 cup of the very cold butter into the flour mixture and combine with a fork until the butter and the dry ingredients are evenly mixed and resemble a dry crumble.
Step 5 -Place the crumble mixture in the refrigerator until ready to use.
Step 6 -In a medium-sized bowl, sift the remaining flour, the baking powder, the baking soda, and the remaining salt and whisk lightly to combine. Set the flour mixture aside.
Step 7 -In the bowl of a stand-mixer, add the remaining softened butter and beat until light and fluffy.
Step 8 -Add the white sugar slowly to the butter and beat to combine.
Step 9 -Add the eggs, 1 at a time, to the butter mixture and beat after each addition until fully incorporated.
Step 10 -Alternate adding 1/3 of the reserved sifted flour mixture and 1/3 of the sour cream to the butter mixture and beat after each addition until fully incorporated and a batter forms.
Step 11 -In the prepared baking dish, add 1/2 of the batter.
Step 12 -Sprinkle 1/2 of the crumb mixture on top of the batter layer in the baking dish.
Step 13 -Repeat the layers with the remaining batter and then the remaining crumb mixture.
Step 14 -Bake until a toothpick inserted into the center comes out clean, about 45 minutes-1 hour.
Step 15 -Transfer the cake in the pan to a wire rack to cool, about 30 minutes.
Step 16 -Serve.
