Ingredients

  • For the chicken:
  • 1 pound chicken breasts, boneless and skinless, cut into 1-inch chunks
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • For the sauce:
  • 1/4 cup reduced-sodium soy sauce
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons hoisin sauce
  • 1 tablespoon ginger, freshly grated
  • 1 tablespoon sriracha
  • rice, optional, to taste, cooked, for serving
  • 2 green onions, thinly sliced, for garnish
  • 2 teaspoons sesame seeds, for garnish

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 - Lightly oil a 9x13 baking dish.

Step 3 -Season the chicken pieces with the salt and the pepper.

Step 4 -Place the eggs and the panko into two separate shallow bowls.

Step 5 -Working in batches, dip the chicken pieces into the eggs and then dredge them in the panko and press to coat.

Step 6 -Place the chicken pieces in the prepared baking dish and bake until they reach an internal temperature of 165 degrees F and are golden-brown and crisp, about 15-20 minutes.

Step 7 -While the chicken pieces bake, in a medium saucepan over medium-high heat, combine the soy sauce, the honey, the garlic, the hoisin sauce, the ginger, and the sriracha until it thickens slightly, about 1-2 minutes.

Step 8 -Stir the cooked chicken into the sauce and gently toss to combine.

Step 9 -Serve the chicken with the sauce over the rice and garnish with the green onions and the sesame seeds.
