When the cookouts start to pop up on your calendar, you've got to have a good go-to side you can quickly put together and bring along! Sprouts Slaw really is the one. All you need are freshly shredded Brussels sprouts, some tart dried cherries, crunchy almonds, and a sprinkle of parmesan and you've got yourself the foundation for some fantastic flavors. Drizzle it with the sweet and citrusy vinaigrette and Sprouts Slaw will bring the flavor fireworks to all your backyard bashes!
Ingredients
- For the vinaigrette:
- 2 tablespoons lemon juice, freshly squeezed
- 1 tablespoon honey
- 1 tablespoon Dijon mustard
- 1 clove garlic, minced
- kosher salt, to taste
- pepper, to taste
- 1/3 cup olive oil
- For the slaw:
- 1 pound Brussels sprouts, trimmed and shredded, plus more, to taste, trimmed and halved, for garnish
- kosher salt, to taste
- pepper, to taste
- 1 cup dried cherries or cranberries, plus more, to taste, for garnish
- 2/3 cup almonds, sliced
- 1/2 cup parmesan cheese, grated
Directions
Step 1 -In a large bowl, add the lemon juice, the honey, the Dijon mustard, the garlic, the salt, and the pepper and stir until it is combined.
Step 2 -Add the olive oil to the vinaigrette mixture and whisk until it is emulsified.
Step 3 -In a second bowl, add 1 pound of the shredded Brussels sprouts, the salt, and the pepper and toss to combine.
Step 4 -Add 1 cup of the dried cherries, the almonds, and the parmesan cheese to the sprouts mixture and toss to combine.
Step 5 -Drizzle 1/2 of the vinaigrette over the sprouts mixture and toss well to coat.
Step 6 -Let the sprouts mixture sit at room temperature, about 15 minutes.
Step 7 -Toss the sprouts mixture.
Step 8 -Taste the sprouts mixture and season with the salt and the pepper, as needed. Toss to combine.
Step 9 -Drizzle the sprouts mixture with the remaining vinaigrette and toss to combine.
Step 10 -Serve the sprouts mixture garnished with the extra halved Brussels sprouts and the extra dried cherries.
