Ingredients

  • 2 cups peas
  • 1/2 cup mixed herbs, such as mint, tarragon, and/or dill, packed
  • 1 lemon, zested, plus 2 1/2 tablespoons lemon juice
  • 1 tablespoon chives, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/8 cup olive oil
  • cherry tomatoes, to taste, halved, for garnish

Directions

Step 1 -In a food processor, add the peas, the herbs, the lemon zest, the lemon juice, the chives, the salt, the pepper, and the oil and pulse until the peas break down but are still textured.

Step 2 -Serve the pesto garnished with the tomatoes.
