Easy and so delicious, just blend some fresh English peas, a bit of mixed herbs, a hint of lemon zest, and minced chives together and you have a newly loved, versatile treat. Used as a spread on your go-to bread, as a dip, or tossed with your favorite pasta, Springtime Pesto gently blows in a new sweetness that everyone can enjoy! Ahh, don't you just love springtime?
Ingredients
- 2 cups peas
- 1/2 cup mixed herbs, such as mint, tarragon, and/or dill, packed
- 1 lemon, zested, plus 2 1/2 tablespoons lemon juice
- 1 tablespoon chives, minced
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/8 cup olive oil
- cherry tomatoes, to taste, halved, for garnish
Directions
Step 1 -In a food processor, add the peas, the herbs, the lemon zest, the lemon juice, the chives, the salt, the pepper, and the oil and pulse until the peas break down but are still textured.
Step 2 -Serve the pesto garnished with the tomatoes.
