Ingredients
- 4 large eggs
- 1/2 cup whole milk
- 1/2 cup heavy cream
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- all-purpose flour, to taste, for dusting a work surface
- 1 (14.1-ounce, 2-count) package refrigerated pie crusts
- 3/4 cup mixed vegetables and/or meat, such as ham and green onions, diced
- 1/2 cup cheese, such as feta, goat, white cheddar, and/or Swiss cheese, shredded or crumbled
- chives, optional, to taste, chopped, for garnish
Directions
Step 1 -In a large bowl, add the eggs, the milk, the heavy cream, the salt, and the black pepper and whisk until it is completely combined.
Step 2 -Tightly cover the egg mixture and place in the refrigerator to chill until ready to use.
Step 3 -Preheat the oven to 375 degrees F.
Step 4 -Lightly coat two 24-count mini muffin pans with nonstick cooking spray.
Step 5 -Use the flour to dust a work surface.
Step 6 -Add 1 of the pie crusts to the prepared work surface and roll it into a 12-inch-wide circle. Mold any of the cracking edges together, as needed.
Step 7 -Use a 2 1/2-inch cookie cutter to cut each of the dough into rounds, re-rolling the dough scraps to cut as many rounds as available, to create about 48 rounds. Be sure to work quickly as the dough becomes more delicate as it warms to room temperature. Repeat with the remaining pie crust.
Step 8 -Place the dough rounds in the prepared mini muffin pan cups and press them down so they are flat on the bottom and slightly coming up the sides.
Step 9 -Pour equal amounts of the egg mixture over the dough rounds and top with the ham, the green onions, and the cheese. Be careful not to overflow the cups.
Step 10 -Bake the bites until the centers are just about set and the edges are lightly-browned, about 25-28 minutes.
Step 11 -Transfer the muffin pan to a wire rack and let the bites cool, about 5 minutes.
Step 12 -Garnish with the chives and serve.
