But when you make Sizzlin' Chicken Fajitas at home, you get to experience that joyful noise plus all the delicious aromas from beginning to end — starting with sautéed chicken marinated in all the Tex-Mex favorites: lime juice, cumin, garlic, and salt. Tossed together with some sweet onions, spicy salsa, and crunchy peppers, your eyes will enjoy the colorful goodness as much as your taste buds do. Ingredients

  • 1/4 cup lime juice
  • 1 clove garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 2 tablespoons olive oil, divided
  • 1 1/2 pounds chicken breasts, boneless and skinless, cut into strips
  • 1 medium onion, cut into thin wedges
  • 1/2 medium sweet red pepper, cut into strips
  • 1/2 medium sweet yellow pepper, cut into strips
  • 1/2 medium green pepper, cut into strips
  • 1/2 cup salsa
  • 12 (8-inch) flour tortillas, warmed
  • 1 1/2 cups cheddar cheese or Monterey Jack cheese, shredded

Directions

Step 1 -In a medium bowl, mix the lime juice, the garlic, the chili powder, the salt, the ground cumin, and 1 tablespoon of the olive oil.

Step 2 -Add the chicken strips to the marinade mixture and toss to coat.

Step 3 -Let the chicken stand for 15 minutes at room temperature.

Step 4 -In a large nonstick skillet, heat the remaining olive oil over medium-high heat.

Step 5 -Sauté the onions, the red peppers, the yellow peppers, and the green peppers until they are crisp and tender, about 5-7 minutes.

Step 6 -Transfer the veggie mixture from the pan.

Step 7 -In the same skillet, sauté the marinated chicken strips until they are no longer pink, about 3-4 minutes.

Step 8 -Stir the salsa and the veggie mixture into the chicken mixture until it is heated through and the chicken is cooked at 165 degrees F, about 3-4 minutes.

Step 9 -Serve the fajitas in the flour tortillas, sprinkled with the cheese.
