The pork is tender and juicy, the potatoes are tender and fluffy, the broccoli is roasted to golden-brown while still retaining its sweet brightness. And everything is ready in 40 minutes! Ingredients
- For the potatoes:
- 1 pound baby gold or red potatoes, cut in half
- 1 tablespoon olive oil, plus more to taste
- salt, to taste
- pepper, to taste
- 2 teaspoons garlic powder
- For the pork chops:
- 4 pork chops, thick-cut and boneless
- pepper, to taste
- salt, to taste
- 1 teaspoon garlic powder
- 1 teaspoon Italian herb seasoning blend
- 1/2 teaspoon smoked paprika
- 2 teaspoons dry ranch seasoning
- For the broccoli:
- 3 cups broccoli florets
- 2 tablespoons olive oil
- salt, to taste
- pepper, to taste
- For serving:
- 1/3 cup parmesan cheese, grated
Directions
Step 1 -Preheat the oven to 425 degrees F.
Step 2 -Grease a baking sheet.
Step 3 -Toss the potatoes with the 1 tablespoon of the olive oil, the salt, the pepper, and 2 teaspoons of the garlic powder.
Step 4 -Arrange the potatoes on 1/3 of the baking sheet, making sure to brush the sheet pan with a little olive oil.
Step 5 -Bake the potatoes for 10 minutes.
Step 6 -While the potatoes are baking, generously season the pork with the pepper, the salt, the remaining garlic powder, the Italian blend, the paprika, and the ranch seasoning.
Step 7 -Add the pork chops to the pan with the potatoes, arranging them in the center third of the pan.
Step 8 -Bake for 10 minutes.
Step 9 -While the pork and potatoes bake, in a bowl, toss the broccoli with the remaining oil and season with the salt and the pepper.
Step 10 -Arrange the coated broccoli on the remaining third of the baking sheet.
Step 11 -Bake until the internal temperature of the pork reads 145 degrees F and the broccoli and potatoes are easily pierced with a fork, about 10-15 minutes.
Step 12 -Allow the pork to rest for 3-5 minutes.
Step 13 -Sprinkle with the cheese and serve.
