Ingredients
- For the seasoning:
- 2 teaspoons chili powder
- 1 1/2 teaspoons ground cumin
- 1 teaspoon ground paprika
- 1/2 teaspoon ground coriander
- salt, to taste
- freshly ground black pepper, to taste
- For the fajitas:
- 1 red pepper, sliced into strips
- 1 green bell pepper, sliced into strips
- 1 bunch green onions, chopped
- 1 1/2 pounds chicken breasts, boneless and skinless, sliced into 1/2-inch-thick strips
- 2 cloves garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons fresh lime juice
- 3 tablespoons cilantro, chopped
- tortillas, optional, to taste, warmed, for serving
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Spray a baking sheet with nonstick cooking spray.
Step 3 -Combine the chili powder, the cumin, the paprika, the coriander, the salt, and the pepper in a small mixing bowl and set it aside.
Step 4 -Spread the red bell peppers, the green bell peppers, and the green onions evenly on the baking sheet.
Step 5 -Add the chicken strips.
Step 6 -Sprinkle the garlic and the fajita seasoning over the chicken and the veggies on the baking sheet.
Step 7 -Drizzle the chicken and the veggies with the olive oil, tossing everything to coat.
Step 8 -Spread the chicken and the veggies out evenly so that the chicken strips are not overlapping.
Step 9 -Place the baking sheet in the oven and cook until the chicken strips are cooked through reading 165 degrees F when tested with a meat thermometer, about 18-25 minutes.
Step 10 -Remove the baking sheet from the oven and drizzle with the lime juice and sprinkle with the cilantro.
Step 11 -Serve the fajitas in the warm tortillas.
