Ingredients

  • 1 1/2 pounds beef stew meat, cut into 3/4-inch cubes
  • 2 cups salsa
  • 1 tablespoon brown sugar
  • 1 tablespoon reduced-sodium soy sauce
  • 1 clove garlic, minced
  • 4 cups brown rice, cooked and warm, for serving
  • jalapeño peppers, optional, to taste, sliced, for serving

Directions

Step 1 -In a 3-quart slow cooker, combine the beef, the salsa, the brown sugar, the soy sauce, and the garlic.

Step 2 -Cover and cook on low until the pieces of beef are tender, about 8-10 hours.

Step 3 -Using a slotted spoon, plate the beef with the rice and top with the sliced jalapeño peppers.
