The Salad Sandwich is something else. It is basically a toasty, melty, savory turkey melt sandwich that has a refreshing, juicy, crisp salad placed on top of the filling! No need for croutons when you have a whole sandwich to provide the crunch! Seriously, Salad Sandwich kind of has it all, because it's a full meal experience in the center of a hoagie roll!
Ingredients
- 4 whole-wheat hoagie rolls, split but still intact
- 8 ounces lower-sodium deli turkey, thinly sliced
- 4 thin slices provolone cheese, halved
- 2 cups iceberg lettuce, chopped, packed
- 1 (6-ounce) container multicolored baby bell peppers, thinly sliced
- 8 thin slices tomato
- 1 cup red onion, thinly sliced
- 2 tablespoons fresh flat-leaf parsley, chopped
- 1/4 cup mayonnaise
- 3 tablespoons red-wine vinegar
- 2 teaspoons Italian seasoning
Directions
Step 1 -Position an oven rack in the center of the oven.
Step 2 -Preheat the oven to 425 degrees F.
Step 3 -Line a large, rimmed baking sheet with parchment paper.
Step 4 -Place the rolls, cut-side up, on the prepared baking sheet.
Step 5 -Divide the turkey evenly among the rolls.
Step 6 -Top the turkey layer with an even amount of the provolone cheese, about 2 half pieces per roll.
Step 7 -In a medium bowl, add the lettuce, the baby peppers, the tomatoes, the onions, and the parsley.
Step 8 -In a small bowl, add the mayonnaise, the vinegar, and the Italian seasoning and whisk to combine.
Step 9 -Pour the dressing over the lettuce mixture and toss to combine.
Step 10 -Allow the salad to stand for 5 minutes.
Step 11 -Bake the sandwiches on the middle rack of the oven until the cheese is melted, the turkey is warmed, and the roll tops are toasted, about 8 minutes.
Step 12 -Transfer the sandwiches from the oven and top each sandwich with about 1 cup of the salad mixture.
Step 13 -Close the sandwiches, then cut them in half crosswise.
Step 14 -Serve immediately.
