  • olive oil, to taste
  • 1 zucchini, sliced into 1/2-inch-thick rounds or slices
  • parmesan cheese, freshly grated, to taste
  • salt, to taste
  • pepper to taste

Directions

Step 1 -Preheat the broiler on high.

Step 2 -Line a baking sheet with aluminum foil and coat well with the olive oil.

Step 3 -Place the zucchini on the baking sheet, and brush the tops of the zucchini with the olive oil.

Step 4 -Sprinkle on the parmesan cheese.

Step 5 -Broil until the cheese starts to brown, about 3-4 minutes.

Step 6 -Flip the zucchini and sprinkle the other side with more of the parmesan.

Step 7 -Broil until golden, about 1 minute.

Step 8 -Serve hot.
