Ingredients

  • 4 (4-ounce) chicken breast halves, boneless and skinless
  • 1 (15-ounce) can of no-salt-added black beans, rinsed and drained
  • 1 (14.5-ounce) can of Mexican stewed tomatoes, undrained
  • 1 (12-ounce) jar of roasted sweet red peppers, drained and cut into strips
  • 1 large onion, chopped
  • pepper, to taste
  • rice, cooked and hot

Directions

Step 1 -Place the chicken in a 3-quart slow cooker.

Step 2 -In a bowl, combine the beans, tomatoes, red peppers, onion, and pepper.

Step 3 -Pour the red pepper mixture over the chicken.

Step 4 -Cover and cook on low until the chicken is tender, about 6 hours.

Step 5 -Serve over rice.
