  • 1 (15-ounce) can pure pumpkin
  • 1 (10-ounce) can evaporated milk
  • 1 cup light brown sugar
  • 3 eggs
  • 3 teaspoons pumpkin pie spice
  • 1 (15.25-ounce) box yellow cake mix
  • 1 cup graham crackers, coarsely crushed
  • 1/2 cup pecans, optional
  • 1/2 cup toffee bits, optional
  • 1 cup butter, melted
  • vanilla ice cream, optional, to taste, for serving

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 9x13-inch baking pan with nonstick spray.

Step 3 -In a large bowl, add the pumpkin, the evaporated milk, the brown sugar, the eggs, and the pumpkin pie spice and stir to combine.

Step 4 -Evenly pour the pumpkin mixture into the prepared baking pan.

Step 5 -Evenly sprinkle the yellow cake mix over the pumpkin mixture in the baking pan, but do not stir.

Step 6 -Evenly top the cake mix in the baking pan with the graham crackers, the pecans, and the toffee bits.

Step 7 -Evenly pour the melted butter over the cake.

Step 8 -Bake the cake until the center is set and the edges are lightly browned, about 45-50 minutes.

Step 9 -Serve topped with the ice cream.
