Ingredients

  • For the crust:
  • baking spray with flour, to taste, for greasing the pan
  • 3 cups all-purpose flour
  • 1 cup unsalted butter, cold and cubed
  • 3/4 cup powdered sugar
  • 1 teaspoon kosher salt
  • For the filling:
  • 4 large eggs
  • 1 cup light corn syrup
  • 2/3 cup light brown sugar, packed
  • 1/2 cup honey
  • 1/4 cup all-purpose flour
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon ground ginger
  • 3 cups pecans, coarsely chopped

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Coat a 9x13-inch baking pan with the baking spray with flour.

Step 3 -Line the bottom and the sides of the prepared baking pan with parchment paper, with a 2-3-inch overhang on two sides.

Step 4 -In a food processor, add 3 cups of the flour, 1 cup of the cold butter, 3/4 cup of the powdered sugar, and 1 teaspoon of the salt and cover the processor.

Step 5 -Pulse the flour mixture until coarse crumbs forms, about 6-7 times.

Step 6 -Firmly press the crumb mixture into the bottom of the prepared pan.

Step 7 -Bake the crumb crust until it is lightly golden-brown, about 20 minutes. Don't worry if the crust has cracks in it.

Step 8 -In a bowl, add the eggs, the corn syrup, the brown sugar, the honey, the remaining flour, the remaining melted butter, the cinnamon, the remaining salt, and the ginger and whisk until smooth.

Step 9 -Add the pecans to the egg mixture and stir to combine.

Step 10 -Pour the egg mixture over the warm crust.

Step 11 -Bake until the filling is set, about 25-30 minutes.

Step 12 -Allow the bars to cool completely in the pan, about 1 hour.

Step 13 -Slice and serve.
