Ingredients
- 1/4 cup butter, cubed
- 1/2 cup brown sugar, packed
- 1 fresh pineapple, peeled, cut into 1/2-inch cubes
- 3 cups vanilla ice cream
- 1/2 cup flaked coconut, toasted
- 1/2 cup macadamia nuts, toasted and coarsely chopped
Directions
Step 1 -In a large skillet over medium heat, melt the butter.
Step 2 -Add the brown sugar to the melted butter and stir to combine.
Step 3 -Add the pineapple cubes to the brown sugar-butter mixture and cook, while stirring, until the pineapple cubes are tender, about 8-10 minutes.
Step 4 -Using a slotted spoon, transfer the pineapple mixture to a plate.
Step 5 -Bring the juices in the skillet to a simmer over medium heat.
Step 6 -Cook the juices until they thicken into a sauce, about 3-4 minutes.
Step 7 -Transfer the skillet from the heat.
Step 8 -In six dessert dishes, evenly layer the pineapple mixture and the ice cream.
Step 9 -Sprinkle the ice cream evenly with the coconut and the macadamia nuts.
Step 10 -Serve drizzled with the warm sauce.
