Taco night is by far one of the best things we can do each week to keep the morale at home high. It's hard not to be happy after eating one of your favorite cuisines! But goodness gracious, once you try these Oven-Baked Chicken Tacos, you'll be in for quite a delicious, good time! These flavorful handhelds are packed full of all your beloved go-tos, like Tex-Mex seasoned chicken and creamy refried beans, sweet-and-spicy veggies, and highly sought-after Mexican blend cheese. Sounds pretty normal, right? So, what makes these so different? It's the time they spend in the oven that makes them oh, so amazing! The shells become perfectly crunchy, the toppings all meld together just dreamily, and the cheese oozes all over the place. It's a true Mexican masterpiece. These Oven-Baked Chicken Tacos are pure bliss and adding your favorite toppings takes them to another level. Are you ready for a weekly taste of infinite joy?! Well, you're about to experience it!
Ingredients
- For the tacos:
- 1 tablespoon olive oil
- 1/2 cup onion, diced
- 1/2 pound chicken, cooked and shredded
- 1 (1-ounce) packet taco seasoning
- 1 (14.5-ounce) can diced tomatoes, drained
- 1 (4.5-ounce) can chopped green chiles, drained
- 10 hard taco shells
- 1/2 (16-ounce) can refried beans
- 2 cups Mexican blend cheese, shredded
- Optional toppings:
- jalapeños, to taste, sliced
- sour cream, to taste
- salsa, to taste
- cilantro, to taste, chopped
- lettuce, to taste, shredded
Directions
Step 1 -Preheat the oven to 400 degrees F.
Step 2 -Coat a 9×13-inch baking dish with nonstick cooking spray.
Step 3 -Heat the olive oil in a medium skillet over medium heat.
Step 4 -Add the onion and cook until it is translucent and fragrant, about 2-3 minutes.
Step 5 -Add the chicken, the taco seasoning, the tomatoes, and the green chiles and stir to combine.
Step 6 -Adjust the heat to low and simmer the chicken mixture, about 5-8 minutes.
Step 7 -Place the taco shells, standing up, into the prepared baking dish.
Step 8 -Bake the taco shells until they are crisp, about 5 minutes.
Step 9 -Spoon 1 tablespoon of the beans into the bottom of the taco shells.
Step 10 -Spoon the chicken mixture over the bean layer, filling the shells almost to the top.
Step 11 -Generously sprinkle the cheese over the tops of each of the tacos.
Step 12 -Bake the tacos until the cheese is melted and the edges of the shells are browned, about 7-10 minutes.
Step 13 -Top the tacos with the jalapeños, the sour cream, the salsa, the cilantro, and the lettuce.
Step 14 -Serve.
