Ultra-tender, golden chicken breasts are savory and perfectly cooked, braised in a creamy and deeply flavorful sauce. There's so much luxury in that sauce, you'll be blown away. Ingredients
- For the chicken:
- 4 chicken breasts, boneless and skinless
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 1/2 tablespoons fresh lime juice
- 1/4 cup onion, finely chopped
- 1 tablespoon cilantro, chopped
- 1/2 teaspoon red pepper flakes
- 3 tablespoons heavy cream
- 2 tablespoons unsalted butter, cubed
- Optional, for serving:
- lime wedges, to taste
- cilantro, to taste, chopped
- asparagus, to taste, cooked and hot
Directions
Step 1 -Preheat the oven to 375 degrees F.
Step 2 -Pound the chicken breasts to an even thickness.
Step 3 -Season the chicken breasts evenly with the salt and the pepper.
Step 4 -In a large, ovenproof skillet over medium-high heat, add the oil.
Step 5 -Add the chicken breasts to the hot oil and cook, turning them once, until browned but not cooked through, about 6-7 minutes.
Step 6 -Transfer the chicken to a plate and tent them with foil.
Step 7 -Transfer the skillet from the heat.
Step 8 -Add the broth, the lime juice, the onions, 1 tablespoon of the cilantro, and the red pepper to the skillet and stir to combine.
Step 9 -Place the skillet over medium-high heat and cook, while scraping the bottom to release the browned bits, until the broth mixture starts to boil.
Step 10 -Gently boil the chicken broth mixture, uncovered, until the liquid reduces to about 1/4 cup, about 10 minutes.
Step 11 -Reduce the heat to medium-low.
Step 12 -Add the heavy cream and the butter to the broth mixture and stir until the butter has melted and the broth mixture thickens.
Step 13 -Nestle the chicken breasts into the sauce.
Step 14 -Bake, uncovered, until the chicken breasts reach an internal temperature of 165 degrees F.
Step 15 -Spoon the sauce over the chicken.
Step 16 -Serve with the lime wedges, the extra cilantro, and the asparagus.
