Ingredients

  • 2 cups water, plus 1/3 cup warm water at 115 degrees F, divided
  • 1 cup quick-cooking oats
  • 3 tablespoons butter
  • 1 (.75-ounce) package active dry yeast
  • 1/3 cup brown sugar, packed
  • 1 tablespoon sugar
  • 1 1/2 tablespoons salt
  • 5 1/4 cups all-purpose flour, plus more for a worksurface

Directions

Step 1 -Grease a large bowl.

Step 2 -Grease two 9-inch round baking pans.

Step 3 -In a large saucepan, bring 2 cups of the water to a boil.

Step 4 -Add the oats and the butter to the water and cook for 1 minute, stirring frequently.

Step 5 -Transfer the oat mixture from the heat and let it cool to lukewarm.

Step 6 -In a large bowl, stir the yeast and the remaining warm water together until yeast has dissolved.

Step 7 -Add the oat mixture, the brown sugar, the sugar, the salt, and 4 cups of the flour to the yeast and beat until smooth.

Step 8 -Add enough of the remaining flour to form a soft dough.

Step 9 -Turn the dough onto a floured surface and knead it until it is smooth and elastic, about 6-8 minutes.

Step 10 -Add the dough to the prepared greased bowl, turning once to grease the top of the dough.

Step 11 -Cover the bowl and transfer the bowl to a warm place until the dough has doubled in size, about 1 hour.

Step 12 -Punch the dough down and allow it to rest for 10 minutes.

Step 13 -Shape the dough into 18 balls and place the balls into the prepared baking pans.

Step 14 -Cover the baking pans and let the balls rise until they have doubled, about 45 minutes.

Step 15 -Preheat the oven to 350 degrees F.

Step 16 -Bake the rolls until they are golden-brown, about 20-25 minutes.

Step 17 -Transfer the pans to wire racks to cool.

Step 18 -Serve.
