Ingredients

  • 1 (9-ounce) bag corn chips
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 1 cup peanut butter
  • 1 cup chocolate chips, optional

Directions

Step 1 -Grease a 9x13-inch baking dish.

Step 2 -Evenly pour the corn chips into the prepared baking dish, covering the bottom as much as possible.

Step 3 -In a large microwave-safe bowl with the microwave on the high setting, add the corn syrup and the sugar and microwave in 1-minute increments, stirring well after each interval, until the sugar mixture comes to a boil, about 3-4 minutes.

Step 4 -Transfer the sugar mixture from the microwave to a wire rack.

Step 5 -Add the peanut butter to the sugar mixture and stir until smooth.

Step 6 -Evenly pour the peanut butter mixture to completely cover the corn chip layer. Do not stir.

Step 7 -In a medium microwave-safe bowl with the microwave on the high setting, add the chocolate chips and microwave them in 30-second intervals, stirring well after each interval, until melted and smooth, about 1-2 minutes.

Step 8 -Evenly spread the melted chocolate chips over the top of the peanut butter layer.

Step 9 -Let the bars cool until they are set, about 1 hour.

Step 10 -With a serrated knife, cut the cooled bars into serving-size pieces and serve.
