Ingredients

  • 5 pounds red potatoes, roughly diced
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1 green bell pepper, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 1/4 cup olive oil
  • 1/2 stick butter, melted
  • 1 teaspoon seasoned salt
  • 1/2 teaspoon cayenne pepper
  • kosher salt, to taste
  • freshly ground black pepper, to taste

Directions

Step 1 -Preheat the oven to 425 degrees F.

Step 2 -In a large bowl, add the potatoes, the garlic, the onions, the green bell peppers, the red bell peppers, the olive oil, the melted butter, the seasoned salt, the cayenne pepper, the salt, and the pepper and toss to combine.

Step 3 -Add the potato mixture to a large baking sheet, spreading it out evenly.

Step 4 -Bake the potato mixture, shaking the pan twice during baking, until the potatoes are just tender, about 20-25 minutes.

Step 5 -Increase the oven heat to 500 degrees F.

Step 6 -Bake the potato mixture until crisp and browned in spots, about 10-15 minutes.

Step 7 -Transfer the potato mixture from the oven and season with more of the salt and more of the pepper, as needed.

Step 8 -Serve.
