Ingredients

  • 4 (4-ounce) chicken breasts, boneless and skinless, patted dry
  • 1/4 cup extra-virgin olive oil
  • 1 1/2 teaspoons dried oregano
  • 1 1/2 teaspoons dried thyme
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons kosher salt, divided
  • 1/4 teaspoon freshly cracked black pepper
  • 1/2 cup white wine, such as sauvignon blanc or pinot grigio
  • 6 cloves garlic, minced
  • 2 teaspoons lemon zest
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon brown sugar
  • 6 lemon slices

Directions

Step 1 -Adjust an oven rack to the middle position, then preheat the oven to 400 degrees F.

Step 2 -Place the chicken breasts in an ungreased 9x13-inch baking dish.

Step 3 -In a medium bowl, add the olive oil, the oregano, the thyme, the garlic powder, 1 teaspoon of the salt, and the pepper and stir to combine.

Step 4 -Evenly coat each of the chicken breasts on both sides with the spice mixture.

Step 5 -In the same medium bowl, add the wine, the minced garlic, the lemon zest, the lemon juice, the brown sugar, and the remaining salt and mix to combine.

Step 6 -Evenly pour the sauce mixture over the seasoned chicken breasts.

Step 7 -Nestle the lemon slices on and between the seasoned chicken breasts, then bake, about 15 minutes.

Step 8 -Transfer the baking dish from the oven and baste the chicken breasts with the juices from the dish.

Step 9 -Return the baking dish to the oven and bake the chicken breasts until they reach an internal temperature of 165 degrees F, about 15 minutes.

Step 10 -Serve the chicken breasts topped with the lemon slices and juices from the baking dish.
