Ingredients
- 8 cups lower-sodium chicken broth
- 4 cups turkey, cooked and shredded
- 1 cup sweet onion, chopped
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon dried thyme
- 1/4 cup water
- 1/4 cup cornstarch
- 3/4 teaspoon kosher salt
- 1 1/2 cups self-rising flour
- 1/4 teaspoon black pepper
- 3/4 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- fresh flat-leaf parsley, optional, to taste, chopped, for garnish
Directions
Step 1 -Add the chicken broth, the cooked turkey, the onion, the carrots, the celery, the garlic, and the dried thyme in a 6-quart slow cooker.
Step 2 -Cover and cook on low until the turkey and the vegetables are tender, about 6-7 hours.
Step 3 -Whisk together the water, the cornstarch, and the kosher salt in a small bowl.
Step 4 -Stir the cornstarch mixture into the turkey mixture.
Step 5 -Cover the slow cooker and cook on high until the mixture begins to simmer, about 10 minutes.
Step 6 -In a medium bowl, add the self-rising flour and the black pepper and whisk to combine.
Step 7 -In a small bowl, add the buttermilk and the egg and whisk to combine.
Step 8 -Add the buttermilk mixture to the flour mixture and mix until just combined.
Step 9 -Add the melted butter into the batter and stir until just combined.
Step 10 -Drop heaping tablespoonfuls of the batter into the simmering soup.
Step 11 -Cover and cook on high until a wooden pick inserted into center of the dumplings comes out clean, about 20-25 minutes.
Step 12 -Serve garnished with the parsley.
