Ingredients

  • 4 medium beets, roasted and wedged
  • 11 tablespoons balsamic vinaigrette
  • 8 cups baby greens
  • 2 ounces soft goat cheese
  • 1 shallot, thinly sliced
  • 1/4 cup salted pistachios, roasted and roughly chopped

Directions

Step 1 -In a medium bowl, place the beets and toss in the balsamic dressing.

Step 2 -Evenly divide the greens between four plates.

Step 3 -Transfer the beets on top of the greens.

Step 4 -Add the goat cheese, the shallots, and the pistachios to the salad.

Step 5 -Drizzle with the salad dressing left in the bowl.

Step 6 -Serve.
