Ingredients

  • 1 cup zucchini, grated
  • 1/4 cup carrot, grated
  • 1/4 cup seasoned bread crumbs
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh basil, chopped
  • 1 egg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon dried oregano

Directions

Step 1 -Preheat the oven to 400 degrees F.

Step 2 -Spray a mini-muffin tin with cooking spray.

Step 3 -Combine the zucchini and the carrots in a large bowl, squeezing out any excess water with a paper towel.

Step 4 -Add the breadcrumbs, the feta cheese, the basil, the egg, the salt, the black pepper, and the oregano to the zucchini-carrot mixture.

Step 5 -Scoop the zucchini mixture using spoons or a mini ice cream scoop into the prepared muffin tin.

Step 6 -Press each scoop into its muffin cup with the back of a spoon.

Step 7 -Bake until the tops are golden-brown, about 15-18 minutes.

Step 8 -Serve hot.
