Ingredients

  • 1 tablespoon vegetable oil
  • 3 1/2 pounds beef chuck pot roast
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1/4 cup butter
  • 1 teaspoon dried rosemary

Directions

Step 1 -Preheat the oven to 275 degrees F.

Step 2 -In a large, oven-safe pot over medium-high heat on the stove-top, pour in the vegetable oil.

Step 3 -As the oil heats, season the chuck roast with salt and black pepper.

Step 4 -Once the oil is shimmering, place the chuck roast in and brown the meat on both sides.

Step 5 -Remove the meat and set it aside.

Step 6 -Add the carrots, celery, and onions to the pot and cook, stirring until the vegetables release their juices, for about 3 minutes. Make sure you scrape up any brown bits at the bottom of the pot as you stir the vegetables.

Step 7 -Add in the butter and cook until the onions become translucent, for about 5 minutes.

Step 8 -Sprinkle in the rosemary and stir.

Step 9 -Add the roast back into the pot, then cover the pot with the lid.

Step 10 -Put the pot in the oven and roast until the chuck roast becomes tender, about 2 1/2 to 3 hours.

Step 11 -Remove from the oven and season as desired.

Step 12 -Serve hot!
