  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 1/2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon pumpkin pie spice
  • 2 1/2 cups carrots, grated
  • 3 eggs
  • 3/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla
  • 3/4 cup walnuts, chopped

Directions

Step 1 -Preheat the oven to 350 degrees F.

Step 2 -Line a 9x5-inch pan with parchment paper.

Step 3 -Whisk together the flour, the sugar, the baking soda, the cinnamon, the salt, and the pumpkin pie spice in a medium bowl.

Step 4 -Mix the carrots, the eggs, the oil, the milk, and the vanilla together in a large bowl.
