There is nothing like a warm bowl of oatmeal on a chilly, brisk day. But when you are serving a large group, that can be hard to accomplish. Hearty Oatmeal Bake is able to satisfy everyone and leave them feeling fulfilled! Old-fashioned rolled oats, crunchy walnuts, plump berries, and some always-loved bananas are layered, then covered in a vanilla-cinnamon sauce to pull it all together. Drizzled with sweet maple syrup and a bit of rich butter, this Hearty Oatmeal Bake has everything that will get you and your group going for the day. It's just a lot of wholesome goodness!

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup walnuts or almonds, toasted and chopped, divided
  • 1/3 cup fine natural cane sugar
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons unsalted butter, melted and slightly cooled, plus more, to taste, for serving
  • 2 teaspoons vanilla extract
  • 2 ripe bananas, cut into 1/2-inch-thick slices
  • 3/4 cup blueberries, divided
  • 3/4 cup blackberries, divided
  • maple syrup, to taste, for serving

Directions

Step 1 -Preheat the oven to 375 degrees F.

Step 2 -Grease an 8-inch square baking dish.

Step 3 -In a large bowl, add the rolled oats, 1/4 cup of the walnuts, the sugar, the baking powder, the cinnamon, and the salt and stir to combine.

Step 4 -In a second large bowl, add the milk, the egg, 3 tablespoons of the melted butter, and the vanilla extract and whisk to combine.

Step 5 -Add the banana slices in a single layer into the prepared baking dish.

Step 6 -Sprinkle 1/2 of the blueberries and 1/2 of the blackberries over the banana slices and evenly top with the oat mixture.

Step 7 -Slowly drizzle the milk mixture over the oat mixture.

Step 8 -Gently tap or shake the baking dish to distribute the liquid evenly.

Step 9 -Evenly scatter the remaining walnuts, the remaining blueberries, and the remaining blackberries over the oatmeal mixture.

Step 10 -Bake the oatmeal mixture until it is nicely golden and set, about 35-40 minutes.

Step 11 -Transfer the baking dish to a wire rack and let the oatmeal bake cool slightly.

Step 12 -Serve the oatmeal bake drizzled with the extra melted butter and the maple syrup.
