You've had grilled chicken with your Caesar salad... but have you ever tried to grill the salad itself? You'll be amazed by this Grilled Caesar Salad! The romaine hearts are still refreshing and crisp, but with the distinct kiss of the grill! A touch of creamy grilled avocado and pops of bright, juicy cherry tomatoes only serve to make Grilled Caesar Salad something special! A homemade creamy, tangy, cheesy Caesar dressing is just the thing it needs to make this salad a masterclass in flavor!

Ingredients

  • For the Caesar dressing:
  • 1/4 cup parmesan cheese, finely grated, plus more, to taste, shredded, for serving
  • 1 medium clove garlic, finely grated
  • 2 tablespoons lemon juice
  • 1/4 cup mayonnaise
  • 1/2 cup Greek yogurt
  • 1 tablespoon olive oil
  • 1 1/2 teaspoons Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • For the grilled salad:
  • 2 romaine hearts, washed and dried, cut in half lengthwise
  • 2 avocados, sliced in half, pits removed and peels-on
  • kosher salt, to taste
  • black pepper, to taste
  • extra-virgin olive oil, to taste
  • balsamic vinegar, optional, to taste
  • 1/2 cup cherry tomatoes, halved

Directions

Step 1 -Preheat the grill to medium-high heat.

Step 2 -In a bowl, add 1/4 cup of the grated parmesan cheese, the grated garlic, the lemon juice, the mayonnaise, the Greek yogurt, 1 tablespoon of the olive oil, the Dijon mustard, 1/4 teaspoon of the kosher salt, and 1/4 teaspoon of the ground black pepper and whisk to combine.

Step 3 -Transfer the dressing to the refrigerator until ready to use.

Step 4 -Season the romaine halves and the avocado halves with the extra salt.

Step 5 -Season the romaine halves with the extra black pepper and drizzle them with the extra olive oil and the balsamic vinegar.

Step 6 -Drizzle the avocado halves lightly with the extra olive oil.

Step 7 -Add the romaine halves to the grill and cook, flipping them once, until slightly charred, about 3 minutes per side.

Step 8 -Transfer the romaine halves to a serving platter, cut-sides up.

Step 9 -Add the avocado halves to the grill, cut-sides down, and cook until grill marks form, about 4-6 minutes.

Step 10 -Transfer the avocado halves from the grill.

Step 11 -Scoop the grilled avocado out of their peels onto the romaine halves.

Step 12 -Add the cherry tomatoes and the Caesar dressing to the serving platter. You may have extra Caesar dressing to store for another use.

Step 13 -Serve topped with the extra shredded parmesan.
