Grilled to juicy, fatty delectability and slathered in thick caramelized barbeque sauce, Grilled BBQ Chicken is a sticky, smoky, sweet delight. Ingredients
- 1 pound chicken thighs, bone-in and skin-on
- 2 teaspoons garlic powder
- 1/4 teaspoon chipotle powder
- 1/4 teaspoon chili powder
- 1/8 teaspoon paprika
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1/3 cup barbecue sauce, plus more, to taste
Directions
Step 1 -Place the chicken thighs on a cutting board and pat them dry with a paper towel.
Step 2 -In a small mixing bowl, combine the garlic powder, the chipotle powder, the chili powder, the salt, and the pepper.
Step 3 -Massage the rub evenly into the chicken thighs.
Step 4 -Allow the chicken to rest for about 30 minutes.
Step 5 -Preheat the grill for direct medium-high heat.
Step 6 -Once preheated, place the chicken skin-side down on the grill over direct heat for 4-5 minutes to crisp the skin.
Step 7 -Flip the thighs and cook for an additional 4-5 minutes.
Step 8 -Flip the chicken thighs once more and move them to indirect heat.
Step 9 -Brush the chicken thighs evenly with 1/3 cup of the barbecue sauce.
Step 10 -Cover the grill and allow the sauce to caramelize for 2-3 minutes.
Step 11 -Ensure the chicken thighs are cooked through at 165 degrees F internally.
Step 12 -Remove the chicken thighs and allow them to rest for about 5 minutes before coating them with the extra barbecue sauce.
Step 13 -Serve warm.
