Ingredients
- 1 tablespoon vegetable oil
- 1 (4-pound) chuck roast or rump roast
- 1 onion, sliced
- 1 (0.7-ounce) packet Italian dressing mix
- 1 teaspoon Italian seasoning
- 2 cups beef broth
- 1 (16-ounce) jar sliced pepperoncini peppers
- 24 slider rolls or 12 hoagie rolls
- spicy giardiniera or pickled vegetables, optional, to taste, for serving
Directions
Step 1 -In a large skillet over medium-high heat, add the oil.
Step 2 -Add the roast to the hot oil and cook, turning it once, until browned on all sides, about 3-4 minutes per side.
Step 3 -In the bottom of a 6-quart slow cooker, add the onion slices.
Step 4 -Add the browned roast on top of the onion slices.
Step 5 -Sprinkle the Italian dressing mix and the Italian seasoning evenly over the roast.
Step 6 -Add the broth, the pepperoncini peppers, and 1/2 cup of the pepperoncini juices to the slow cooker.
Step 7 -Cover the slow cooker and cook until the beef is tender and reaches an internal temperature of 160 degrees F, about 5-6 hours on high or 9-10 hours on high.
Step 8 -Transfer the roast to a cutting board and using two forks, shred it.
Step 9 -Add the shredded beef to the cooking liquids in the slow cooker and cook on high, while stirring occasionally, until the flavors fully infuse into the meat, about 20 minutes.
Step 10 -Serve on the rolls and top with the spicy giardiniera.
